Legend has it that in June 1889, to honor the Queen of Italy Margherita of Savoy, the famous chef Raffaele Esposito of the historic Pizzeria Brandi invented this dish which he called Pizza Margherita (with reference to the fact that the term “pizza”, then unknown outside the Neapolitan city, it almost always indicated sweet cakes), where the salty condiments of tomato, mozzarella and basil represented the colors of our flag. It certainly represents one of the symbols of the Italian cultural and culinary heritage, widespread for its fame all over the world and in all its variants.
